But what about the taste? Something dark green with all of those healthy supplements must taste bad, right?

Nope. With the use of only stevia and erythritol as natural sweeteners and nothing artificial or full of fillers, the taste is quite pleasant. I just used water to mix my dose each day and could easily sip and enjoy the drink. If mixing with almond milk or in a smoothie, I bet it would be even better.

So it tastes good, but does it work?

Yes! I just returned from a week long family vacation and had no desire to lug my entire stack of supplements. Instead, I chose to bring Genesis to take at the start of each day. I’d drink a serving in water every morning on an empty stomach and could feel the smooth stream of energy, health and mood-boosting benefits throughout the day. Mixing is easy with no clumping in a shaker bottle. I mixed with a fork and had a few clumps, but since it tastes good, I didn’t mind.

As a guy who prefers to cook his own food, I had limited resources which meant I was eating less than usual. Being at the beach and a lover of all things active, I wasn’t just lounging around, I was fighting the waves, playing in the sand and water with my daughter, walking all over the area, and kayaking. I attribute my ability to maintain healthy energy levels and recover properly to do it all again to Genesis.

Now that we’re back home, I’m still taking Genesis every day and not touching my giant stack of supplements. I’m sure I’ll get back to them again, but why spend so much time when Legion has just what I want at the doses proven to work?

I’ve been completely satisfied with this greens superfood supplement and honestly can’t find anything bad to point out. Some people may not like the flavor, but I find it pleasing and could even eat it as a treat. I’ve used other healthy greens supplements and can say firsthand, they are not as pleasant.

Legion Genesis Green Superfood Protein Bread

Prep Time: 5

Cook Time: 40

Ingredients (1 9×5 Loaf)

  • 1/2 cup coconut flour
  • 1/2 cup protein powder (I used Legion Whey+ Vanilla Protein)
  • 1/4 cup Legion Genesis Green Superfood
  • 1.5 tsp aluminum free baking powder
  • 1/4 tsp baking soda
  • 12 drops vanilla or regular liquid stevia (or use 3 – 4 stevia packets or 1/8th pure stevia powder)
  • 1 overripe banana, mashed
  • 1/3 cup canned unsweetened coconut milk
  • 2 whole eggs or 1/4 cup egg whites
  • 1/2 teaspoon cinnamon

Instructions

Grease a 9×5 loaf pan making sure to get all the up the sides and corners. I used coconut oil.

Preheat oven to 350 F

Add all ingredients and blend until smooth.

Pour batter into the prepared pan and bake in the middle of the rack for 40 minutes.

Remove from the oven and let cool completely to room temp. This allows the bread to retract from the sides as it cools which makes it MUCH easier to remove.

Go around the sides with a thin rubber spatula or butter knife and turn upside down to remove from loaf pan.

Slice as thick or thin as you’d like and enjoy your healthy bread plain or with a pat of grass-fed butter. Better yet, smother it in NuttZo!

3 Quick & Healthy Vegetarian Mexican Recipes

I have been craving Mexican food lately, but since we choose not to order from food establishments, that means I have to make my own Mexican recipes. No problem, I using simple ingredients most of us have in the kitchen, it’s easy to put something healthy and tasty together in under 30 minutes. To make it easier, omit the meat for Meatless Monday and give these guys a break…..for at least one day.

Being Monday where no one is happy about the end of the weekend and beginning of a work week, it’s good to keep meal prep nice and simple. Simple is not the same as a convenient drive-thru window at a nearby fast food chain, a little prep in your own kitchen is needed. But, this can be fun and done in less than 30 minutes.

Here’s what you’ll need:
– 1 can of fat-free refried pinto or black beans
– Reduced fat (part-skim) mozzarella cheese or cheese sticks
– Dried cilantro
– 16oz Jar of your favorite salsa
– 6 inch Corn tortillas; I prefer the Food For Life sprouted whole grain tortillas; or use butter or romaine lettuce for a grain-free option
– Garlic, Cumin, and Onion Powder
– Cayenne pepper
* Optional toppings: Shredded lettuce, sliced avocado, chopped raw onion (green, red, or yellow), and sour cream (plain yogurt is a great substitute too)

With these ingredients you can make many vegetarian Mexican-style snacks/meals. Here’s how I make easy tostadas, chips and dip, and bean burritos.

Bean Tostada

Mix the can of refried beans with your jar of salsa, cilantro, garlic, cumin, onion, and cayenne powder. Cut or shred the cheese to your liking. Spread the bean mixture on top of a corn tortilla and sprinkle about 1/2 or 1 ounce of cheese on top; toast in a toaster oven or conventional oven at 375 degrees until the edges start to turn brown and crispy. Remove from oven, let cool, add shredded lettuce, sliced avocado, and a dollop of plain yogurt if desired, and eat!

Healthy Bean Dip
Mix the beans and other ingredients like you did for tostadas, then mix in 6 ounces shredded cheese. Microwave for 30 seconds, stir, microwave 30 more seconds, stir; continue until the cheese is melted and well incorporated in the mix.
Cut the corn tortillas into 6 or 8 wedges, sprinkle with a little salt, and bake in a 350 degree pre-heated oven until lightly browned (about 5 – 8 minutes).
Now you have homemade chips and dip. If you don’t want to make your own, Beanitos are a favorite chip in our home.

 

Mix the plain yogurt in the dip if you would like, it adds a cool and tangy taste that’s pleasing to the palate. For an even healthier option, I choose crudites like raw baby carrots, broccoli, or celery as the perfect dipping devices.
Bean Burritos
With the same bean mixture as the other two quick-fix recipes, fill the middle of a corn tortilla (flour tortillas usually contain hydrogenated oils and I do not recommend them) or use a hardy lettuce like butter lettuce or romaine for a grain-free option with about 2 heaping spoonfuls and a half ounce of cheese.
Wrap in paper towel and microwave for 30 – 40 seconds; enjoy!  Since these are smaller, you will probably want more than one.  They are more like flautas, only not fried and much better in my opinion.
For reference, an ounce of cheese is similar to four dice; if shredded, about a 1/4 cup.
The combination of beans and a whole grain like corn provides all essential amino acids to make a complete protein, so you will not miss the meat today. Treat your friends, family, and self to one or all of these easy Meatless Mexican meals this Monday or any day and relax.

Quinoa Salad Recipe: Curry in a Hurry

Quinoa is pretty awesome stuff. Being a staple seed in our home, I’m always looking for new and tasty ways to prepare the tiny spheres of complete protein. Since I just bought some curry powder, I figured I’d put our staple seed (quinoa is technically a seed, not a grain) to the test.

The result was healthy mix of colorful protein and veggies that’s delicious hot or cold. Fluffy quinoa, a little bite from the curry, a big bite from the cayenne, and so many flavors all work magic in this simple dish.

Quinoa Curry Salad Recipe

Our daughter loves quinoa, and since I usually cook it when G-Ma comes over, we’ve coined the term “Quinoa for G-Ma” which she repeats all day long.

Make this Curried Quinoa Salad and double the ingredients to have throughout the week for work or as a quick fridge to plate dinner.

Ingredients (serves 4):

•1 cup dry quinoa; rinsed
•3 – 4 cloves garlic, minced
•1 onion; chopped
•12oz package of frozen green beans
•10 – 12oz package of frozen chopped broccoli
1 (15 oz) can of beans; I used black-eyed peas, but you really can’t go wrong with any  bean
•1 cup chicken stock
•2 tablespoons spicy brown mustard
•1 tablespoon each of curry powder, cumin, basil, cilantro
•1/2 teaspoon cayenne
•sea salt and pepper to taste

To prepare:
1. Heat non-stick sauce pan.
2. Add garlic and onion. Cook for three minutes or until soft. Add spices and let toast for 20 seconds.
3. Add vegetables, quinoa, stock and salt and pepper (if desired).
4. Cook for 20 minutes or until quinoa is fully cooked (it will be translucent).
5. Transfer to large bowl or portion out into storage containers for each person. Place in fridge to chill.
3. Whenever you’re ready, take out of fridge and enjoy; no heat required!

Feel free to adapt the recipe to whatever veggies, herbs, and spices you have on hand. Just a bag of frozen spinach is easy and adds tons of nutrition to make a healthy meal even healthier……and tasty too!

Going Mom isn’t a fan, so I added sliced beets to my dish afterward. They add beautiful color, nutrition, and taste (to me)!
I love the versatility of quinoa and have cooked it as a savory dish many times as well as in coconut milk with a little vanilla stevia and of course NuttZo for a wonderfully energizing breakfast.
