I'm an ex-mutual fund accountant who left the cubicle world to be a stay-at-home dad to my beautiful little girl, Avery, who entered our life on 11/15/13. Also happily married to my wife, Kelley, for 7 years as of 8/17/14. Sorry ladies... :) Fitness and nutrition is of the upmost importance in our family and we strive to reflect this in our daily life. I always prepare our meals at home and only go out if it's a special occasion, and even then I tend to not get much. Food should be fun and a joy to eat, not something quickly consumed from a fast food chain or scarf down before the next meeting. I have come from strictly logging high miles to train for the next marathon to keeping exercise varied and focusing more on strength. I still enjoy going for a run when I can, but nothing crazy, and I prefer hill sprints while pushing my daughter, Avery in the stroller. She loves it and I get a great workout! I want to show the world how to appreciate their body and feed it real, wholesome food while moving more throughout the day. In doing so, everyone would be healthier, happier, and we'd all live in a better place as a result. I blog mainly about my life as a stay-at-home dad and frequently include reviews, participate in campaigns, and share my thoughts on fitness and nutrition. If you ever have any questions or thoughts to share, please reach out as I'm always open to listening or helping others however possible. That is, when I have free time since Avery is and my wife are the number one priorities!

Touring the Fire Department: #MySundayPhoto

We visited a local fire department twice this past week. We live close to a few, and paid a visit to a different one each time. This has to be the best idea for something that’s free and kids love.

Avery was a bit shy in front of the firemen and the massive trucks, but once home, that’s all she talked about. We’ll have to make a trip back to see the big trucks and kind firemen again soon as it’s quickly becoming a nice break in routine, and daddy likes the big trucks too!

So far, we’ve collected three firemen hats from the fire department (the first visit had two stuck together), and plenty of golden sticker badges. The stickers helped us stop a mounting meltdown already, so I’m making sure to keep plenty of those around for the future!

Smiling With Our Froggy Friend: #MySundayPhoto

The summer heat is in full effect in Texas. Being a family that loves the outdoors, we do what we can to safely get outside. Lately, in an effort to keep our little girl smiling, that means exploring in our backyard in the afternoon when we have shade from the house.

There are several moist areas in our yard that make the perfect spot for amphibians to cool off. We’ve found frogs both big and small hanging out in the yard, and as long as they’re small enough, Avery doesn’t mind when I put one up to her face.

She actually loves chasing them across the yard and picking them up to bring them back to our garden area. I love seeing her interacting with nature, and hopefully, as she grows, so will her tolerance for catching cool bugs, reptiles, and animals.

Healthy Low Calorie Coconut Protein Granola

Do you love granola but not the stuff in most packaged versions? If yes, you’re not alone. Finding a good granola without added vegetable oils, is non-gmo (preferably organic), free of refined sugar, and doesn’t have too many dried fruits (with added oil and sugar) is not easy. Nevermind the high price of a tiny bag of most “gourmet” versions!

Similar to my coconut salmon cakes, this recipe takes the healthful deliciousness of granola to your kitchen? This greatly reduces cost while increasing nutrition.

High protein, gluten free, no refined sugar, and full of crunchy flavor, how can you NOT love it? This coconut granola will have you skipping the bags on the shelf and quickly making a second batch in your home.

Seriously,  make a second batch because the first one will go quick. I speak from experience….

Healthy Low Calorie Coconut Protein Granola

Ingredients

Instructions

  • Preheat oven to 325.
  • Mix the dry ingredients together in a large mixing bowl using a wire whisk.
  • In a separate mixing bowl, add the pumpkin puree with 2 T milk or water.
  • Melt the coconut oil and mix into pumpkin mixture.
  • Add the wet to the dry and stir until well combined; this takes a while, be patient
  • On a parchment lined cookie sheet spread the mixture out evenly and bake for 30 – 35 minutes. Every 10-15 minutes stir and break up the granola for even baking.
  • Remove from oven once you see granola turning a deep golden color.
  • Allow to cool and enjoy however you would. The clusters make excellent portable snacks and smaller pieces can be used for your milk/yogurt “dressing”.

If you don’t care about the gluten free part, feel free to substitute rolled oats in place of the puffed cereal. Or you can use certified gluten-free oats. The oats will actually make for a crunchier granola.
