Have you ever used protein powder as a substitute for regular flour in baked goods? I’ve been doing it for years with some bad, some good, and some fabulous results. Luckily, this strawberry protein cake using biPro’s Strawberry Protein Powder really….um, takes the cake!

Writing the review of biPro’s Strawberry Whey Protein left me craving something full of strawberry goodness to snack on. Maybe share a little with the little one too. A smoothie is easy, but I wanted something I could eat and use as the perfect NuttZo delivery device.

Not sure why it always sits right at the window I look out of most often, but it sure does drive me NuttZ…..O!

Back to the protein cake. With no real recipe to follow, I mixed and measured tossed ingredients together and put it all into the oven. The end result was good, but now I had remake it and actually measure. Ugh. You will be happy to know that the second time around came out even better. Hey, measuring does serve a purpose!

BiPro Strawberry Protein Cake

Strawberry biPro Protein Cake

Cook Time: 20 – 25 Minutes

Ingredients

  • 1/2 cup cottage cheese (can substitute Greek yogurt)
  • 2 eggs or 1/2 cup egg whites
  • 2 tsp chia seeds
  • 2 tsp pure vanilla extract
  • 1 cup coconut flour
  • 1/2 cup biPro Strawberry Protein Powder
  • 1 tsp aluminum free baking powder
  • 15 drops liquid vanilla stevia or 1/16 tsp stevia powder
  • optional shredded coconut as desired

Instructions

1. Preheat oven to 350 F, and line an 8-inch square or round pan with parchment (or grease very well).

2. Combine all ingredients in a mixing bowl and let sit at least 10 minutes. If batter is too thick, add unsweetened almond milk 1 tablespoon at a time to help mix it better.

3. Pour batter into the prepared pan, and smooth down evenly. Bake 30 minutes or until a toothpick inserted into the cake comes out clean.

4. Remove from oven and allow to cool at least 10 minutes before devouring each and every protein-packed bite.

biPro asked me if I’d like to review their new strawberry flavor to which I happily accepted. Their natural chocolate, vanilla, and unflavored whey proteins already received my seal of approval, and I expected the new addition would so be added to the highly touted seal.

As I’ve already alluded to, before even tasting the strawberry whey protein, it’s scent of fresh strawberries easily filled half of our house. The aroma was almost instantaneous, and had me eager to give it a try.

With only six ingredients, naturally sweetened with stevia (zero sugar), 90 calories and 20 g of protein per 25 gram serving, this is not the typical, low quality protein powder. Simply looking inside at the powder will reveal tiny pieces of real strawberries.

Probably where the wonderful smell of fresh strawberries comes from; actual strawberries! The only thing I’d like to see is that their whey protein source come from grass-fed cows, and organic would always be preferred. But that is a known factor, not something I would count against them. So, how did I like it?

Solubility – This powder mixes easily in any shaker cup with or without a blenderball. I mixed a scoop in water by just shaking my cup with zero clumping.

Taste – Unlike the wonderfully intense smell, the taste was not as powerful. To some, including me, this is a good thing. I used water to mix, mind you, so any milk will change the flavor a little. It’s not overly sweet that might give it an artificial, chemically flavor. For me, the flavor is subtle, not overpowering, which makes for the perfect foundation of blending with frozen strawberries for a healthy and delicious treat.

Texture – After shaking in water, the mixture turns a creamy pinkish brown. It was smooth, but the color might be off putting. But it’s a welcome color for me since biPro did not use any artificial or natural dyes just to change colors. If it really bothers you, just blend with berries in a blender and you’ll get a more pleasing red/pink color. Problem solved!

I make green smoothies for our family every night before dinner and decided to treat my two lovely girls with the Strawberry BiPro Protein Powder. With lots of greens, spirulina, hemp seeds, frozen strawberries, and the Strawberry protein, I blended with water and a little unsweetened almond milk. The resulting nutrient-packed smoothies were a hit! Smooth, creamy, full of nutrients, and delicious enough to earn a hug and kiss, will have me making many more in the future.

I recently introduced whey protein back into my diet by being very cautious of the quality of the ingredients. When biPro offered to send me a few samples to try, I did a quick search for ingredients on their site and saw enough to spark my interest.

A short list of ingredients is usually a great starting point. Whey protein isolate and sunflower lecithin in their unflavored protein is as short as they’ll come. Which makes a very clean supplement facts list….

For their flavored products (just chocolate and vanilla), natural flavors, cocoa (for chocolate), monk fruit, and stevia are all that’s added. Stevia is my preferred natural, no calorie, and tasty sweetener of choice, so when I see it in products, I assume some level of quality care is used in the creation.

This holds true for biPro, but I would prefer to see the whey come from grass-fed cows and the rest of the ingredients to be non-gmo to truly stand apart. This isn’t a deal breaker, but would make me feel better about implementing biPro as a daily supplement.

Nevertheless, I found that their powder mixes easily in any liquid and tastes surprisingly good with such a short list of ingredients. Actually, I love vanilla, and their French Vanilla mixed just in water satisfied my sweet tooth. At first it was a little too much, but I just needed to add a little more water to dilute and it made a perfectly healthy and tasty pre/post workout drink.

I used the chocolate to mix into overnight oats which turned out amazing and was a real treat mixed with Greek yogurt and strawberries for a healthy, muscle-building “dessert”. I didn’t have enough to try, but can only imagine biPro Whey Protein Isolate would make a wonderful Protein Microwave Cake or even Whole Grain Protein Beer Bread if you use their Unflavored Protein.

If you’re looking for a high quality, naturally sweetened whey protein isolate that has no sugar, carbs, fat, or lactose, biPro is a good choice. While I wish it were non-gmo and the source of the whey was from grass-fed cows, I would still have it on occasion and offer it to others looking for a healthy whey protein supplement.
